Mafaldine, also known as Reginette, are long, curled dried pasta with ribbon shapes. Originally called "Fettuccelle Ricce" in Naples, they were renamed in honor of Princess Mafalda of Savoy.
Once cooked, Mafaldine has a unique textural contrast. The curled edges hold more sauce than the smooth parts, creating an interesting bite experience.
This versatile pasta pairs well with various sauces. Neapolitan ragù with ricotta, game sauces, and seafood sauces made from shellfish are all delicious options. Mafaldine also shines with white sauces made from soft cheeses, where the addition of curry, saffron, horseradish, or ginger adds a unique flavor twist.

The Pasta is cut using traditional bronze drawplates which results in a rougher, more porous surface allowing sauces to beautifully coat the Pasta. This technique combined with a slow drying process creates Pasta with an exceptional aroma, flavour and consistency.
